This gochugaru is made by Haedam, owned by the married couple Jeong Chang-dong and Lee Hae-Seon. They returned to farming in Yeongyang in 2004 to produce organic chili peppers.
The chili peppers are certified organic (farm number #16100465 by Woori Agricultural Certification Center).
What is organic farming?
Organic farming avoids the use of chemical fertilizers, pesticides, or herbicides. Instead, it relies on organic matter, beneficial microorganisms, and natural oils to cultivate chili peppers.
These chilies are grown at the end of Geummarae Valley in Ilwol-myeon, Yeongyang-gun, Gyeongbuk. The significant temperature difference between day and night thickens the pepper skin, enhances sweetness, and gives it a beautiful red color.
To preserve their natural spicy flavor and deep-red color, the peppers are dried at low temperatures for over 4-5 days, rather than using an industrial dryer. This method maintains the natural color, aroma, and taste of the chili peppers.
