[Sigol Won] Maesil-Eck (Plum Extract Liquid)
Maesil Extract is an essential ingredient in Korean homecooking.
What is maesil? Maesil is the Korean term for green plums (also known as Mumes in English). It has been used throughout Korean history for its health benefits - like creating a stronger digestive system, promoting heart regularity and serving as an antibacterial agent.
Nowadays, it's most frequently used as a sugar substitute (or supplement) in Korean dishes. From salad dressings, meat marinades and dipping sauces, maesil adds a full-bodied sweetness with a touch of tartness. It can also be consumed straight - simply dilute the syrup with some water and a few ice cubes to make a refreshing iced tea.
So how is it made? Sigol Won packs equal parts maesil and sugar into an air-tight jar. It's left to sit for three months as the plum slowly releases its juices.
